10 inch (25cm) square baking tin

Whisk ; sieve ; brown paper ; Bakewell paper ; cake tin ; weighing machine ; several large bowls ; tablespoon ; teaspoon ; nut grinder ; foil

INGREDIENTS


Ingredient
Imperial measure
Metric measure
Currants 16 ounces (16 oz = 1 lb)  
Raisins 16 ounces (16 oz = 1 lb)  
Sultanas 16 ounces (16 oz = 1 lb)  
Brandy 2 glasses  
Butter 8 ounces (8 oz)  
Muscovado sugar (*) 2 ounces (2 oz)  
Caster sugar 6 ounces (6 oz)  
Black treacle 1 tablespoon  
Gravy browning (optional) A few drops  
Finely chopped candied peel 2.5 ounces (2.5 oz)  
Orange One (peel only)  
Lemon One (peel only)  
Eggs Six  
Plain flour 8 ounces (8 oz)  
Nutmeg 0.25 teaspoons  
Ground almonds 5 ounces  
Glacé cherries 6 ounces (6 oz)  

(*) A soft, fine brown sugar


The main ingredients for the cake

INSTRUCTIONS



Take the currants ...

... raisins ...

... and sultanas


Add together
in a large bowl

Add 2 glasses
of brandy

Stir together
and leave overnight


Measure out the butter ...

... Muscovado sugar ...

... and caster sugar


Mix these three together

Cut up the butter with a knife

Whisk


Add the
black treacle

Add the peels of 1 orange and
1 lemon and the candied peel

Add a few drops of gravy browning.
Whisk the mixture


Take 6 whole eggs

Whisk

Add some of the egg, and whisk


Measure
the flour

Sieve some of the flour
into the mixture

Whisk, and repeat until all of the
flour and egg has been added


Measure the ground almonds ...

... and ground nutmeg ...



... the nibbed almonds ...

... and glacé cherries ...

... and add to the mixture


Add raisins, currants
and sultanas

Stir together, and add a bit
more brandy if you want

The texture of the mixture
should be like this


Line a cake tin with two layers
of brown wrapping paper ...

... and two layers of baking
parchment paper

Add the mixture
into the tin


Cook in middle of the oven
at 275F (140C, gas mark 1)
for 3 hours 45 minutes

When ready,
remove from
the oven ...

Gradually unwrap it
and leave it to cool
on a tray for several hours


Wrap in foil and cling film until ready to eat.
If you want, you can then add marzipan/icing
to make a Christmas cake
